Menu Monday

Since things have slowed down, I'm trying to make a new recipe every other week. This week's new recipe is courtesy of my friend Robin. She created it on her own and it sounds yummy. Can't wait to make it.

Monday
- Robin's Meatloaf Muffins (see below for the recipe), side salad
Tuesday - Turkey Clubs, Homemade French fries
Wednesday - Sauteed Halibut, Corn,
Thursday - Shredded Chicken Taco Salads
Friday - Dinner in Charleston, WV (heading there Friday AM for a wedding)
Saturday - Dinner at the Wedding in Charleston

Robin's Meatloaf Muffins
2 pounds lean ground beef
1/2 cup chopped onion
1 cup dry bread crumbs
2 eggs
1 teaspoon salt
lots of ground black pepper
3/4 cup ketchup
squeeze of mustard
squeeze of bbq sauce
chopped red peppers (optional)
variety of hot spices (optional)

DIRECTIONS
Preheat an oven to 350 degrees for one hour. Lightly grease a 12 cup
muffin pan.

Mix ground beef, onion, bread crumbs, eggs, salt, and pepper in a
bowl and all other ingredients. Scoop mixture evenly into prepared
muffin cups.

If desired, remove from oven after 50 minutes, drizzle ketchup on the
top of each muffin, and return to oven for an additional 10 minutes

love the shout outs!!! when i made this recipe i cut it in half since it was only me and Ryan. I bought the thing of ground beef (i used ground turkey but either way) and i cut it in half and used one egg instead of 2. That way y ou dont have to eat meatloaf for a month!! and it ended up making 6 muffins...so that was totally enough

That looks so cute! Everyone loves finger foods and meatloaf is such a comfort food, it sounds even cuter in that size! Thanks for the recipe!

Hey there-

Glad you got the books. :)

About the bed......we bought it about 3 years ago at Pottery Barn Outlet. It's king size & we paid $120 for it (love the outlet!!!). It's still available online and in stores, but is priced at $650 for a queen and $850 for the king. :(

I love it - it's gorgeous & very well made.
