Pinterest Wednesday - Great Recipe for Cauliflower Soup

Thank you to Closet Cooking for these fabulous recipe for Cauliflower soup.  I pinned this earlier in the week and was so excited to make it because I had gotten cauliflower in my Washington Green Grocer order.  I made it in prep for Hurricane Sandy (we faired well considering and never lost power) and it turned out delicious.  I've included the recipe below.  It's the perfect comfort food for fall weather.  For a lower calorie option I'm going to make it without the milk and see how it turns out.  I think it will be just as good.

Ingredients

1 small head cauliflower, cut into florets
2 tablespoons oil
salt and pepper to taste
1 tablespoon oil
1 medium onion, diced
2 cloves garlic, chopped
1 teaspoon thyme, chopped
3 cups vegetable broth
1 1/2 cups aged white cheddar, shredded
1 cup milk or cream
salt and pepper to taste

Directions

  1. Toss the cauliflower florets in the oil along with the salt and pepper and arrange them in a single layer on a large baking sheet.
  2. Roast the cauliflower in a preheated 400F oven until lightly golden brown, about 20-30 minutes.
  3. Heat the oil in a large sauce pan over medium heat.
  4. Add the onion and saute until tender, about 5-7 minutes.
  5. Add the garlic and thyme and saute until fragrant, about a minute.
  6. Add the broth and cauliflower, bring to a boil, reduce the heat and simmer, covered, for 20 minutes.
  7. Puree the soup until it reaches your desired consistency with a stick blender.
  8. Mix in the cheese, let it melt and season with salt and pepper.
  9. Mix in the milk and remove from heat.

Healthy Alternatives - Chicken Nuggets

Since having my sweet baby four months ago, I've been trying to lose the baby weight.  Most of it has come off with breastfeeding and working out but I'm struggling with the last five pounds.  It's hard because I love food so I've been trying to find some healthy alternatives.  First recipe to try was a success - healthy chicken nuggets.  They taste great and the panko was a great trick.  Perfect for a football Sunday.  Thanks to Gina's Skinny Recipes for the recipe. Healthy Baked Chicken Nuggets

Servings: 4 • Serving Size: 1/4th of nuggets • Old Points: 4 pts • Points+: 4 pts
Calories: 164.9 • Fat: 4.6 g • Protein: 22.1 g • Carb: 7.7 g • Fiber: 0.9 g Sugar: 0.1 g

  • 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
  • salt and pepper to taste
  • 2 tsp olive oil
  • 6 tbsp whole wheat Italian seasoned breadcrumbs
  • 2 tbsp panko
  • 2 tbsp grated Parmesan cheese
  • olive oil spray 
Preheat oven to 425°. Spray a baking sheet with olive oil spray.

Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.

Pinterest Wednesday - Healthy Breakfast Treat

Another recipe I love thanks to Pinterest.  These are very healthy breakfast cookies...no sugar and egg, flour and dairy free.  I know what you are thinking...probably no taste.  That's what I thought too but wanted to give it a try because I need something easy to eat in the morning and healthy at the same time.  And these turned out pretty good.  Thanks to Watching What I Eat for the recipe!  Check out her blog for other great healthy recipes.  


Ingredients
  • 1 1/2 cups uncooked oatmeal, quick or old fashioned 
  • 2 ripe bananas, mashed with fork until creamy
  • 1 cup unsweetened applesauce
  • 1/3 cup raisins, or to taste ((optional ~ you can add in some dried cranberries (replacing the raisins)   Trader Joe's makes a really good one.))
  • 1/4 cup chopped walnuts, toasted (or regular, if you prefer or none...I'm not a nut person so I opted for none)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (or more, to taste) 
Directions
  • Preheat heat oven to 350 degrees. 
  • Mix vanilla extract & cinnamon into the applesauce.  
  • Blend applesauce mixture with all other ingredients & let sit for 10 minutes 
  • Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds. 
  • Bake approx. 30-35 minutes, or until golden & done. 
  • Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack. 
  • Store in a covered container when completely cool.

Favorite Thing #229 - Dill Bread Dip


I've been making lots of new recipes during my maternity leave and I would say 99% of them have turned out amazing.  Another one to share with you is a simple dip recipe.  I tried this dip at my good friend's baby shower and had to have the recipe.  It's super easy and definitely a crowd favorite.  There really isn't a name for it so I'm just going to call it Dill Bread Dip.

Ingredients
16 oz sour cream
1 cup mayo
2 tbsp dill (I used fresh)
2 tbsp minced onion
2 tbsp garlic salt
2 tbsp season all salt

Directions
Combine all ingredients together and then refrigerate for a few hours before serving.  You can serve it with pretty much anything.  I prefer veggies or fresh bread.  Enjoy!

Pinterest Wednesday - Slutty Brownies

I first had these brownies at the beach with my step SIL made them.  They are AMAZING but definitely full of calories.  Essentially one brownie combines some of my favorite desserts - chocolate chip cookies, oreos and brownies.  The recipe is simple, easy and they are quick to make.  Sure to be a crowd favorite at your next gathering.  Thanks to Blog is the New Black for posting the recipe.


Slutty Brownies
Ingredients
  • 1 box of cookie mix, prepared as instructed or 1 sleeve of cookie dough
  • 1 box of brownie mix, prepared as instructed
  • 1 Box Oreo Cookies 
Directions
  1. Preheat your oven to 350°F.
  2. Prepare both the cookie mix and brownie mix as the package instructs.  (You may want to make your cookie dough a tiny bit “wetter” due to the longer cooking time.  Personally, I did not try this but wish I had!)
  3. Cover the bottom of the baking pan with your cookie dough, patting down to cover entire surface. 
  4. Top with a layer of Oreos.  Fit in as many as you can.
  5. Pour your brownie batter over Oreo layer.
  6. Bake for 30 minutes, or until brownie layer is cooked through. 
  7. Remove from the oven and allow to cool.
  8. When completely cooled, use a sharp knife to score brownies.

NEW FEATURE - Pinterest Wednesday

I want to be able to share my Pinterest finds with you so I decided to start Pinterest Wednesdays to showcase my new discoveries.  First up a new recipe for slow cooker pot roast.  Having a newborn at home I'm trying to find easy recipes and this one was perfect!  The meat was super moist and the vegetables full of flavor!  It took all of five minutes to put in the crock pot and all day to cook.  Very yummy!!!

Recipe - Super Easy Banana Trifle


This is a really easy recipe for a homemade Banana Trifle.  It's a summer favorite for me to bring to parties.  It's easy to make and doesn't take too much time. The dish has a few components - homemade pudding, homemade whipped cream, bananas and vanilla wafers.  The directions might look complicated but I promise they aren't.   

Ingredients for Pudding
3 egg yolks
1/2 cup sugar
1/3 cup flour
2 cups whole milk
1/2 teaspoon vanilla extract

To Make Pudding 
1) Whisk egg yolks together until they are smooth.  Then whisk in the sugar until the mixture is a lemon yellow.  Whisk in flour and milk.

2) Put the mixture in a 1.5 quart saucepan and set over medium heat.  Whisk until the mixture thickens.  Stir in the vanilla.

3) Put in a container and refrigerate until ready to build the trifle. 

Ingredients for Whipped Cream 
2 cups heavy cream
2 teaspoons vanilla extract
2 tablespoons confectioner's sugar

To Make Whipped Cream
In a large bowl (helps if its a metal bowl that's been chilled), whip cream with mixer until stiff peaks are just about to form.  Beat in vanilla and sugar until peaks form.  Put in container and refrigerate until ready to build trifle. 

Building the Trifle (need pudding, whipped cream, vanilla wafers and sliced bananas)
Put a thin layer of pudding into trifle dish.  Cover with a layer of vanilla wafers then whipped cream, then bananas.  Continue the layering.  For the top of the dish you can do your own creation of vanilla wafers, bananas and whipped cream combinations.

Yummy Breakfast Casserole

We spent last Saturday with our good friends in Philly and Sunday morning my dear friend Shannon made a wonderful breakfast with this amazing French Toast Casserole that I had to share with all of you. It's sooo good. I highly recommend it. It is definitely going to be my go-to when we have company.

French Toast Casserole

1/2 cup butter

2 TBSP pancake syrup

1C brown sugar

5 eggs

1 1/2 C milk

1 esp. vanilla

cinnamon

1 loaf french bread (Pepperidge Farms cinnamon swirl bread)

In a saucepan heat butter, syrup and brown sugar until melted and bubbly. Pour into 9x13 pan. Lay slices of bread on top. Mix eggs and milk and vanilla in separate bowl and pour over bread. Cover with plastic wrap and refrigerate over night. In morning, remove plastic wrap and bake at 350 for 30-40 min. until golden brown. Serve warm. Enjoy!!

Super Bowl Recipe Ideas

Here are some of my favorite recipes that are perfect for Super Bowl parties...of course none of them are healthy. What are some of your favorites?

Idiots Delight

Ingredients
1 lb sausage
1 lb beef
1 lb Velveeta cheese (cut into chunks)
butter
garlic salt
onion salt
cocktail ryes

Directions
In a big pan, brown meat and drain. Return meat to pan and melt cheese in with meat. Spread butter on bread and sprinkle with salts. Put meat & cheese mixture on bread. Bake at 350 for 10 or 15 minutes.

Buffalo Chicken Dip

Ingredients
2 cans (10 oz) white chunk chicken
3/4 cup of hot wing sauce
2 pkg. (8 oz) cream cheese
1 cup ranch dressing
1 1/2 cup shredded cheddar cheese
Bag of Fritos to serve...or whatever you desire

Directions
Drain the chicken well, mix chicken and hot sauce on stove top until hot. Add cream cheese, ranch dressing and cheddar cheese. Once mix thoroughly. Serve up with Fritos or whatever you want.

Sopapilla Cheesecake Recipe

Ingredients
2 cans of crescent rolls
1 1/2 cups sugar
1 teaspoon vanilla
1 teaspoon cinnamon
2 (8 oz.) packages cream cheese, softened
1 stick butter

Directions
Preheat oven to 350F. Press 1 can of crescent rolls into bottom of 9 X 13 inch pan. Mix cream cheese, 1 cup sugar and vanilla until creamy. Spread over rolls in pan. Cover with other can of rolls. Melt butter and stir in rest of sugar and cinnamon. Pour over top. Bake for 30 minutes. Can be served warm or room temperature.

Pumpkin Whoopie Pies

Ingredients
1 1/2 sticks (6 ounces) unsalted butter, 1 stick melted, 1/2 stick softened
1 cup packed light brown sugar
2 large eggs, at room temperature, lightly beaten
1 cup canned pure pumpkin puree
1 tablespoon pumpkin pie spice
1 1/2 teaspoons pure vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon plus 2 pinches salt
1 2/3 cups flour
4 ounces cream cheese, chilled
1 cup confectioners' sugar

Directions
Preheat the oven to 350°. Line two baking sheets with parchment paper.
In a large bowl, whisk together the melted butter and brown sugar until smooth. Whisk in the eggs, pumpkin puree, pumpkin pie spice, 1 teaspoon vanilla, the baking powder, the baking soda and 3/4 teaspoon salt. Using a rubber spatula, fold in the flour.
Using an ice cream scoop or tablespoon, drop 12 generous mounds of batter, spaced evenly, onto each baking sheet. Bake until springy to the touch, about 10 minutes. Transfer to a rack to cool completely.

Meanwhile, using an electric mixer, cream the softened butter with the cream cheese. Add the confectioners' sugar and the remaining 2 pinches salt and 1/2 teaspoon vanilla; mix on low speed until blended, then beat on medium-high speed until fluffy, about 2 minutes. Spread the flat side of 12 cakes with cream cheese frosting. Top each with another cake.

Fabulous Homemade Basil Pesto Recipe

Thank you so much to Pocket Full of Pink for an amazing Pesto recipe. I made a batch over the weekend. I froze some and saved some for a meal this week. It was so yummy. Here's the recipe so you can make it at home.


Fresh Basil Pesto

Ingredients:

2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano Cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
salt and freshly ground black pepper to taste

1. Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.

2. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

Serve with pasta, grilled chicken, on baked potatoes, or spread over toasted baguette slices.

Great Appetizer Recipe

My SIL made these amazing (unhealthy) snacks for our Super Bowl party and I have been making them for every gathering we've had since. They are so yummy and so easy to make.

Ingredients
1 lb sausage
1 lb beef
1 lb Velveeta cheese (cut into chunks)
butter
garlic salt
onion salt
cocktail ryes

Directions
In a big pan, brown meat and drain. Return meat to pan and melt cheese in with meat. Spread butter on bread and sprinkle with salts. Put meat & cheese mixture on bread. Bake at 350 for 10 or 15 minutes.

Great Banana Cake Recipe


Thanks to Jamie of All Trades for sharing this yummy banana cake with cream cheese frosting. I made it over the weekend and it was a huge hit! I also must give her credit for the amazing photo. My cake didn't look as pretty. :)

Cake Ingredients
3 very ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon vanilla extract
Grated zest of 1 orange {i didn't have an orange so i subbed in lemon zest}
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt

Cake Directions

Preheat oven to 350 degrees. grease and flour a 9 x 2-inch round cake pan.

Mix bananas, granulated sugar and brown sugar in bowl with an electric mixer on low speed until combined. add oil, eggs, sour cream. vanilla and orange zest. mix until smooth.

Stir together flour, baking soda and salt in a separate bowl. With mixer on low, add dry ingredients and mix just until combined. Stir in chopped walnuts. pour batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. cool in pan for 15 minutes, turn out onto cooling rack and cool completely.

Frosting Ingredients
8 oz cream cheese, soften
8 oz unsalted butter, soften
1 tsp vanilla
3 cups powdered sugar, sifted

Frosting Directions
Mix cream cheese and butter until smooth. Stir in vanilla and powdered sugar, mix together until smooth. Frost on top of the cake, cut and serve.

Great New Recipe - Slowcooker Risotto

This weekend Hubby was home so I decided to make a home cooked meal for him. I decided to try a new recipe and needed something easy so I went with Sun-Dried Tomato Risotto from A Year of Slow Cooking. It was SUPER easy and sooo delicious. Here's the recipe -

Ingredients
1/2 cup sun-dried tomatoes in oil
1 1/2 cup Arborio rice
4 cups chicken broth
1/2 cup shredded Swiss cheese (I used Parmesan instead)

Directions
Use a 4-quart slow cooker. Put the sun-dried tomatoes into the bottom. Add rice and swirl it around in the oil until it is well-coated. Add the chicken broth. Cover and cook on high for 2 to 4 hours. I found that mine cooked in 2 to 3 hours so just keep checking on it until the rice is tender. Remove the lid of the cook and stir in cheese. Turn off cook and let the risotto sit for 10 with the lid off before serving. Enjoy!

We also had our friends over and their adorable 3 week old baby. He fell asleep on me...isn't he adorable?

Chicken Cilantro Pot Sticker Soup

Full credit goes to Danica's Daily for this recipe. I love to find healthy recipes that taste amazing and this is one of them. Her own creation, Chicken Cilantro Pot Sticker soup, was super easy and full of flavor! The best part was I had most of the ingredients already at home. I didn't have any squash or scallions so I didn't add them but the soup still tasted great. And for you WW followers one serving of this soup is only 4 points.

Yummy Braised Short Ribs


I made these VERY yummy braised short ribs last weekend and they were a huge hit among our guests. It was super easy to make and soooo good. I served them with mashed potatoes and grilled asparagus. The recipe is actually from Olive Garden's website (thanks Doug and Kellie).

Note: the picture above is not what mine looked like. I forgot to take a picture.

Ingredients

3-4 lb(s) boneless beef short ribs*
1/2 tsp salt
1/2 tsp pepper
2 tsp extra virgin olive oil
2 medium yellow onions, chopped
4 large garlic cloves, minced
2 cup(s) Chianti wine
1 32-oz can crushed tomatoes
3 cup(s) beef broth
2 tsp fresh rosemary, chopped
*Your grocery store butcher can cut into individual ribs and de-bone.

Directions

Pat the short ribs dry and season with salt and pepper.

Coat a large, nonstick pan with olive oil. Sauté the short rib pieces over medium-high heat for about two to three minutes on each side or until brown. When finished, transfer the short ribs to a bowl.

Next, add the onions to the pan and cook over medium heat for approximately three minutes. Once the onions are translucent, add the garlic and cook for one minute.

Add the Chianti, rosemary, beef broth and tomatoes to the pan one at a time, allowing the liquid to evaporate partially before each addition (about two minutes).

Return the short ribs to the pan, including any juices that might have accumulated in the bowl. Cover and let simmer for three hours on low heat to complete the braising process.

Remove the short ribs from the pan and boil the liquid until it’s reduced by half, about 10 minutes.

Return the short ribs to the pan and heat thoroughly.

Serve with potatoes or risotto and vegetables.

A great new recipe


On Monday, I made a new recipe that was really good. It was the perfect meal for a cold day. I wanted to take advantage of the vegetables that were delivered last week so I found this recipe on FoodNetwork.com. The roast was absolutely delicous and full of flavor. I was very excited because I got to use my new dutch oven (thanks to my brother and future sis-in-law for the Christmas gift). When I make this again, I think I'm going to use a leaner piece of meat, the chuck roast was too fatty. Also, I wasn't a big fan of the vegetables. Next time, I think I might add potatoes to it and increase more of the broth.

Here's the recipe -

Ingredients

Pot Roast:

  • 1 (3 to 4-pound) beef chuck roast
  • Kosher salt and freshly ground black pepper to taste
  • 1 tablespoon all-purpose flour
  • 3 tablespoons vegetable oil
  • 5 cloves garlic, smashed
  • 1 large onion, sliced
  • 1 (15-ounce) can whole tomatoes, in juice
  • 1/2 cup red wine
  • 2 cups beef broth, homemade or made from beef bouillon (2 bouillon cubes and 2 cups hot water) not canned
  • 3 sprigs fresh thyme, or 2 teaspoons dried
  • 2 bay leaves
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water, optional
  • 1/3 cup coarsely chopped fresh flat-leaf parsley, optional

Roasted Vegetables:

  • 2 medium red onions, peeled and quartered, or 6 shallots, peeled and halved
  • 3 carrot carrots, peeled and cut into 2-inch chunks
  • 2 medium parsnips, peeled, cut into 1/2-inch coins
  • 1 medium turnip, peeled and cut into 8 wedges or 1 medium celery root, peeled and cut into 8 large chunks or both
  • About 5 tablespoons olive oil
  • Kosher salt and freshly ground black pepper

Directions

Preheat the oven to 350 degrees F.

Heat a large Dutch oven, with a lid, over medium-high heat. Season the meat generously with salt and pepper, and sprinkle lightly with the flour. Add the oil to the pot, lay the meat in the pan and sear on both sides until a deep mahogany brown, about 10 minutes. Transfer the meat to a plate. Pour all but about 2 tablespoons of the oil from the pan.

Add the onion and garlic to the pan, and cook until fragrant and soft, about 5 minutes. Add the tomatoes, breaking them up by hand as you add them to the pot, and cook until a deep brick red, about 2 minutes more. Add the wine, and with a wooden spoon scrape up any browned bits that cling to the bottom of the pot. Add the remaining tomato liquid, beef broth, thyme, and bay leaves, and bring to a boil. Return the roast to the pot, nestle it in the liquid, cover and transfer pot to the oven.

Cook until the roast is just tender, about 1 1/2 hours. Remove the lid and continue to cook, uncovered until tender about 1 hour more.

Meanwhile, toss the onions, carrots, parsnips, and turnips with the olive oil, salt, and pepper. Spread out on a baking sheet in 1 layer. You may have to use 2 baking sheets. Once the roast comes out of the oven, raise the temperature to 450 degrees F. Roast the vegetables, turning about halfway through cooking, until caramelized and tender, about 30 to 45 minutes.

Transfer the roast to a plate and cover loosely with foil. Skim the fat off the surface of the liquid and discard. Bring the sauce to a boil over medium-high heat, and cook until thickened. For a thicken sauce whisk in the cornstarch mixture and bring to a boil. (Test the thickness of the sauce by spooning some onto a plate and checking the consistency). Stir in the parsley, taste and adjust salt and pepper, as needed. Keep the roast warm in the sauce until ready to slice.

Slice the pot roast and lay on a platter, surround with the vegetables. Pour some of the sauce on top and serve the remaining in a sauceboat on the side.

  4. Favorite Thing #19, 52 and 57 - Emily Giffin Books - I've loved all of Emily Giffin's books. Great chic lit. And her first two books, Something Borrowed/Something Blue are being made into a movie.
  5. Favorite Thing #58 - Sopapilla Cheesecake - One of the greatest and easiest desserts ever to make! It's heaven in your mouth.
  6. Favorite Thing #195 - Washington Green Grocer - Hubby and I just started using this service and I love it. We get fresh, local fruits and vegetables. I've found since we started we are eating healthier and trying new things.
  7. Favorite Thing #183 - Mexican Train Domino Game -Super fun game to play with family and friends.
  8. Favorite Thing #179 - Honest Tea Peach White Tea -Such a refreshing drink for the spring and summer.
  9. Favorite Thing #196 - Yankee Candle Harvest - This scent just reminds me of the fall season. I burn it all fall long...love it!
  10. Favorite Thing #169 - Villa Cerrina Chardonnay-Pinot Grigio -One of my favorite wines. The perfect blend of chardonnay and pinot grigio...so refreshing.

Healthier Lasagna


The other day I made Bethenny Frankel's recipe for lasagna. I wanted to try this recipe because it was healthier and didn't call for a lot of cheese. I used ground meat instead of turkey sausage because that's what I already had in my freezer. I also used my homemade sauce because I had some made already.

INGREDIENTS
  • 8 ounces whole wheat lasagna noodles
  • 1 pound turkey sausage (take it out of the casing)
  • 16 ounces any tomato sauce (don’t be a hero--just buy the kind in a jar)
  • 1/2 cup chopped fresh Italian (flat leaf) parsley
  • 2 tablespoon chopped fresh basil
  • 15 ounces part–skim ricotta cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 ounces shredded part-skim mozzarella cheese
  • 1/3 cup freshly grated Parmesan cheese
DIRECTIONS
  1. Preheat the oven to 350. Cook the noodles according to package directions. Set them aside.
  2. Brown the turkey sausage in a nonstick skillet with cooking spray. Stir in the tomato sauce. Set aside.
  3. In a bowl, combine the parsley, basil, ricotta cheese, salt, and pepper. Set aside.
  4. Spray a baking pan (9x13 inches) with cooking spray. Ladle about 1/3 of the tomato meat mixture into the bottom of the pan. Cover with half the noodles. Spread half the herb-ricotta mixture over the noodles. Repeat with another 1/3 of the sauce, the remaining noodles, the remaining ricotta-herb mixture, then cover the whole thing with the remaining sauce. Sprinkle the mozzarella cheese and the Parmesan cheese over the top.
  5. Bake for 30 – 45 minutes or until heated through and bubbling.

Paula Deen's Crunch Top Apple Pie - YUM!

We have lots of apples at the house from last weekend's apple picking adventure. I decided to make an apple pie per Hubby's request. I tried Paula Deen's Crunch Top Apple Pie and it was DELICIOUS! Pretty easy to make...I used pre-made pie crust which I think helped. The time consuming part was peeling and chopping the apples.

Ingredients

Dough and Filling:

  • Dough for a double crust 9-inch pie (homemade, frozen, or refrigerated)
  • 3/4 cup sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • Dash salt
  • 3 1/2 cups peeled, chopped cooking apples
  • 1 (16-ounce) jar applesauce
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, chopped into small pieces

Crunch Topping:

  • 3 tablespoons all-purpose flour
  • 1 tablespoon sugar
  • Dash salt
  • 1 tablespoon butter, at room temperature

Directions

Preheat oven to 425 degrees F.

Line a 9-inch pie pan with half of dough. Combine sugar, flour, cinnamon, and salt in a bowl. Stir in apples, applesauce, and lemon juice. Spoon apple mixture into pie pan and dot with butter. Cut remaining crust into strips; arrange in a lattice design over top of pie. For crunch topping, combine flour, sugar, and salt in a bowl. Using a fork, cut in butter until mixture is crumbly. Sprinkle over top of crust. Bake for 10 minutes, then reduce heat to 350 degrees F and continue to bake for about 45 minutes, or until crust and topping are golden brown.

Another copy cat recipe

This weekend I tried another "Almost Famous" recipe from Food Network magazine. As some of you may remember, this past winter I successfully recreated Panera's Broccoli-Cheddar soup so I thought I would try another recipe. This time I wanted to make Olive Garden's amazing bread sticks. I followed the recipe and they actually tasted almost exactly like Olive Garden's. The recipe was pretty easy to follow...but time consuming. The dough can be very sticky at one point and was annoying to knead. Thankfully the results were delicious! Here's the recipe.

Ingredients

For the Dough:

  • 1 package active dry yeast
  • 4 1/4 cups all-purpose flour,plus more for dusting
  • 2 tablespoons unsalted butter,softened
  • 2 tablespoons sugar
  • 1 tablespoon fine salt

For the Topping:

  • 3 tablespoons unsalted butter,melted
  • 1/2 teaspoon kosher salt
  • 1/8 to 1/4 teaspoon garlic powder
  • Pinch of dried oregano

Directions

Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.

Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.

Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
