Favorite Thing #83 - Pumpkin Seeds
October means Halloween, candy, fall weather, pumpkin carving, and a new favorite thing - pumpkin seeds! Last year, my husband and I started a tradition with our friends Lisa and Lee and we pick a weekend in late October, buy pumpkins, carve them, have dinner and then bake pumpkin seeds. I had never had pumpkin seeds until last year and now I am hooked. They are really easy to make. While you are carving your pumpkin just place the seeds in a separate bowl. Clean the seeds and place them on greased baking sheet (I just use my Misto and spray it with olive oil) then spray the seeds (again I use the Misto or you can use Pam) , salt them a little bit and bake them in the oven at 300 degrees for approx. 1 hour. About half way through you should flip the seeds. Take them out of the oven and then they are ready to eat. It makes the perfect snack. Thanks to Lisa's mom for telling us how to bake the seeds.
