Great Recipe


At the beach this summer, my sister-in-law Meghan made some yummy cheesy potatoes. She sent me the recipe and I had to share with you. It's too much for me to make for dinner for just Hubby and I so I have to wait till we have people over to make them. The picture above isn't a picture of the potatoes...just a Google Images picture of cheesy potatoes.

Cheesy Picnic Taters

1 bag frozen shredded potatoes--I think it's 32 oz.
1 med onion--i use red onion
1 can cream of chicken soup
1 16 oz sour cream--i use fat free
2 cups shredded cheddar cheese--i use low fat from skim milk

mix all those ingredients together and put in a casserole dish, and top with corn flake crumbs. you are supposed to top the crumbs w tiny pats of butter, but i have a more reduced fat method. i buy actual corn flakes cereal, and put a bunch in my food processor (or blender if u don't have one) with 1-2 teaspoons olive oil, pulse it up, and all the flake crumbs become greased enough that you don't need any butter. bake 40 min covered, then last 20 min uncovered (1 hour total) at 350 degrees.

this recipe is also really good if you replace the shredded frozen taters with "o'rida crispy crowns" --same amount (they are like little disc-sized tater tots, and replace the cornflake-oil crumbs with crushed ritz crackers (make them the same way in the food processor with a tiny bit of oil.

I had this at a potluck once and it was heaven. They actually made it in a slow cooker. Did you ever try it with the frozen O'Brien potatos? They come with diced peppers and onion. So good!

I make this, too, and it's sooooo goooooood. I once made it for a girls' brunch, and those ladies wolfed it down. Such great comfort food!!
